Jessica Rose meets Sahara Rose for Taco Tuesday!

I have not posted in a while, I have been very busy during this quarantine and yes, I am still doing photography, just not traveling more food related.


In February 2020, I decided to take an online yoga certification course through A&I Yoga to be able to teach yoga to everybody of all shapes and sizes and abilities. It has been an amazing journey that is only just beginning. Part of the curriculum included a book called Eat Feel Fresh by Sahara Rose Ketabi, which is the inspiration for this blog. Eat Feel Fresh is a contemporary plant based ayurvedic cookbook. I am all over the place with my diet sometimes I eat meat, sometimes fast-food, sometimes I eat fruit and veggies, but I am not on a consistent diet.


I love to cook a few times a week, so I came up with the plan to cook my way through this cook book and really understand and get a "taste" of what it's like to cook and live on a plant based diet. Now, some of you may feel this is hypocritical or in-genuine, but my goal is not to live on solely a plant based diet, my purpose and goal of this is experiment is to try something new, learn new recipes and understand different spices and ingredients. I am hoping to gain knowledge of different foods and how they affect my body and others. I am hoping to learn more about what tastes I like and dislike, to eventually lead me to a more consistent diet and a healthier lifestyle.


After reading the intro of this book, I realized my mind-body characteristic is mostly Pitta with some Kapha. To give you a little idea of what these words mean, Pitta is compromised of fire and water, representing transformation. Fire and water are two powerful energies and Pitta is just that. Pitta is in charge of metabolism, digestion, nutrient assimilation and more. Pitta's should eat less chocolate in the summertime, and over course I am craving chocolate so what was the first recipe I started with, the Avocado Fudge Brownies page 228. Why I started here I have no clue, needless to say I took one bite of these brownies and haven't craved or eaten chocolate since. I made these on Tuesday today is now Friday. This was very challenging for me, I should have started with something a little more simple, when baking I know from experience you have to be very precise. I tried to grind the flaxseeds I have on my own instead of buying ground flaxseed which I think really caused and issue, just spend the extra money and buy the ground flaxseed. IT was very interesting to make the "flax egg"

Needless to say, these were not my favorite and I do not know why I started with this recipe. I have not given up and I will come back to these eventually.


I also made (in the same day, I was feeling ambitious) Tacos the Cauliflower & Lentil Tacos (on page 163) and these were AMAZING. I would make them again, they were so quick and easy once you have the vegetables chopped and the lentils are softened. I also love mushrooms, so I did add some mushrooms as well, it would have been fine either way. I think it is a misconception that you only get full from meat, I ate three of these tacos and was full until the next afternoon.


I think my next recipe will be the Thai Budda Bowl. Stay tuned to see how it turns out!
